A culinary journey through the memory of Tsuwano. A full course savouring ingredients of the Iwami region, the climate and the time of the land through the five senses. From a sweet-shrimp pudding shaped after the shrimp crest of the former Hashimoto sake brewery as the opening dish, each plate is woven with nature's blessings and local food culture — a composition that ties you to the memory of the land.
